For that necessary kickstart in the morning

Smoothies play a crucial role in my well-being. The classic is a handful of frozen raspberries, a few strawberries, greek yogurt, a splash of juice, a banana and a little honey. Blend and devour.

But when spring arrives I have a tradition of trying to resuscitate my body after almost half a year of cold, and Mordorish darkness. Yes, we Swedes do love our winter, but don’t forget that we also love to complain about the same winter until the sun warms our souls again.

We’re still two or three weeks away from the first harvest of sprouts and other goodies like stinging nettle (it’s like spinach – but free!) and until then I have to make due with whatever goodies I can find in the store.

Actually I am a little skeptical when it comes to almost overdosing vegetables in a drink that is supposed to be enjoyed in the morning (why I do not know, but guess I’m a little old-fashioned). This, however, is balanced so that it feels like a delicate kiss of vitamins and energy, without being too healthy.

If you want it a little sting add a small piece of ginger. If you have strawberries left in the freezer, they are not bad to add either. Can also think of a lime for extra freshness.

But then again, why make it more complicated when this is exactly what you need.

Smoothie with spinach and pineapple

Time: 5 minutes
Servings: 2

  • 1 frozen banana (do as the Bluths and always have a couple in the freezer)
  • 1/2 pineapple
  • 1/2 cucumber (peeled)
  • 1 handful of fresh spinach
  • 200 g (almost 1 cup) orange juice or similar
  • 2-4 leaves of fresh mint
  • 1 tbsp honey
  1. Mix everything well using your favorite blender.
